Delicious Veggie Burger Recipe for the Whole Family

This delicious veggie burger is packed with fresh vegetables and tasty spices that will be a hit with everyone! Simple and easy to prepare, this tasty mid week meal is one of our favourites!

Ingredients for Veggie Burger:

  • 600g butternut chopped pumpkin
  • 1 x 400g can chickpeas, drained
  • 1 large zucchini, grated
  • 1 small onion grated
  • 1 egg, lightly whisked
  • 2 Tablespoons plain flour
  • 1 1/2 teaspoons paprika
  • 1 teaspoon ground cumin
  • Salt & freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 x 200g container natural yoghurt (optional)
  • freshly chopped parsley

Method

Step 1

Cook the pumpkin for 10 minutes in boiling water until tender. Drain.and place in a bowl with chickpeas and mash together. Add zucchini,onion, egg, flour, 1 teaspoon paprika, and cumin. Season with salt and pepper. Stir until combined.

Step 2

In a non stick fry pan, heat oil over medium heat. Spoon pumpkin & chickpea mixture into pan to make four 8cm patties. Cook for 4 minutes each side or until brown and cooked through.

Step 3

Combine yoghurt and remaining paprika in a bowl and set aside. Sprinkle Parsley on top.

Step 4

Serve with fresh salad and yoghurt dressing.
